After the summer, from the excesses and bad schedules it is good to give your body and mind light food, to help cleanse possible toxins that have accumulated.
That’s why we propose this delicious dish to start again with the batteries charged and keep the immune system strong. Enjoy!
INGREDIENTS
For 4 people:
- 160 gr red lentils
- 120 gr wild rice
- 120 g basmati rice
- 1 avocado
- 1 handful of raisins
- 1 handful of almonds
- 8 broccoli flowers
- 1 small onion
- 4 medium carrots
- 100 gr of beetroot
- 1 zucchini
- 1 handful fresh mint leaves
- Olive oil
- Salt
- 8 ginger slices
- 1 teaspoon of flax seeds
- 1 teaspoon of cumin seeds
- 4 cardamom grains
- 2 cloves of garlic
- 1 table spoon Ghee
PREPARATION
Melt the ghee in a frying pan. Fry the cumin and cardamom seeds. Then add the ginger (five slices), raisins and almonds. Reserve the mixture (when we have boiled the rice we sauté it with all this).
To prepare the beet puree, sauté the onion and garlic in a pot. When they are golden brown, put the beet in pieces. Sauté and add the mint and water to obtain a thick purée. Boil for 20 minutes and mash.
When boiling, the red lentils dissolve easily so they will be like a purée that we will accompany with the sautéed rice. Boil the lentils with one garlic, 3 slices of ginger and the fennel seeds.
